Mediterranean Roasted Chicken


  • 4 1/2 pounds (2kg) chicken separated 
  • 3 1/4 pounds (1 1/2 kg) Yukon Gold potatos, peeled and cut into wedges
  • 4 cloves garlic, minced
  • 2 medium-sized onions, sliced
  • 9 ounces (250g) fresh diced tomatoes
  • 7 ounces (200g) sun-dried black olives
  • 2 sprigs fresh chopped rosemary
  • 1 teaspoon dried oregano
  • Salt to taste
  • 1 teaspoon ground paprika
  • 1/2 teaspoon chili flakes
  • 2/3 cup olive oil 



Place the chicken, potatoes, garlic, onions and olives in a large oven pan. Season with rosemary, oregano, salt, paprika and chili flakes. Toss all ingredients together with olive oil. 


Roast in an oven preheated to 350˙F for 90 minutes.
